I'd like the one extra hour before strat. Tue/Thur would be impossible for me until baby figures out that nights are for sleeping
Plus It'd reduce aggro by not having an extra night of raiding.

Friday/Saturday nights are totally out for me.
Tuesday/Wed./Thurs. would be a possibility but not super late. Like, 8-10 server might be fine on one of those days. 2 hours of farming to just get stuff down we know we can kill quickly.
